Chef cover letter example

A chef's cover letter should name your section and covers, one dish or menu you developed, how you run stock and food safety, and the kitchen you want to cook in. Head chefs read it in a minute, so keep it short.

Why each paragraph is there

  1. I am applying for the Junior Sous Chef position at Kittiwake Fish Kitchen. I am a chef de partie with six years in hotel and restaurant kitchens, and I run the sauce section at The Grain Store Brasserie, a 90-cover brasserie in Edinburgh.

The position, your level and the kitchen you work in now.

  2. I run my section for up to 180 covers on a Saturday with one commis chef. I develop two dishes for each seasonal menu with our head chef and cost them to the menu's margin; this autumn's hake with mussels and a cider sauce has stayed on as a special.

Covers, a dish of your own and the costing a sous chef must do.

  3. I check deliveries and place the section's orders with three suppliers, and I keep our temperature and allergen records and train new commis chefs on them. Your menu is built around Scottish fish and shellfish, which is the cooking I most want to do.

Stock and food safety, then a real reason for this kitchen.

  4. I can work split shifts, evenings and weekends. My CV is attached, and I would be glad to come in for a trial shift. Thank you for your time.
